The Chef, who has just received the carbon neutral seal for six of his ventures, made a point of ensuring that his new restaurant will be opened neutralizing its CO2 emissions.

Erick Jacquin (57), chef, entrepreneur and judge on Master Chef Brasil, reopened his restaurant Cinq Restaurante in December, formerly Buteco do Jacquin — and made a point of starting his activities in a monitoring process, in which his Carbon Footprint and its impact on the environment will be analyzed, thus ensuring that his CO2 emissions are duly quantified and neutralized.

Six JL Group businesses that were certified in October 2022 — Président, Bistrô Ça-Va, Jacquin's bar (Cinq Restaurante), Lvtetia, Delivery Jojô, and Président Eventos — received plaques with the Neutralization and Preservation Certificates during the reopening event. This is because, in addition to the amount of credits to neutralize his activities, Jacquin also invested in voluntary preservation credits, which means helping to cover the costs, maintenance, and protection of two hectares of forest in the Amazon Biome.

The Chef wants 100% of his properties to be “carbon neutral,” which means that they do not increase the amount of greenhouse gases in the atmosphere, resulting in a “zero effect” on global warming.

In order to neutralize his activities, the Chef opted for compensation through the acquisition of carbon credits, investing in the REDD+ Yuxibu project, which takes care of the Amazon rainforest and its guardian communities. This system promotes exchange between those who generate carbon credits by reducing emissions and those who need to offset their residual emissions.

The process begins with the quantification of carbon dioxide emitted from the consumption of energy, water, transportation, for example, evaluating the direct and indirect emissions of greenhouse gases from an activity. After mapping all emission sources and calculating their impacts, an inventory of Greenhouse Gases is prepared that will serve as a guide for the adoption of effective strategies for reducing and neutralizing Carbon.

In the case of the Chef, both the Inventory and the decarbonization of his ventures are being carried out by Canopée Gestão Ambiental, a climate company that, through its REDD+ Projects, conserves forest areas in the Amazon biome, positively impacts the lives of local communities and generates carbon credits. To ensure real and efficient results, Canopée's activities are audited and certified from end to end by Bureau Veritas, an internationally recognized organization.

The use of renewable energy sources, waste and water resource management programs, control of greenhouse gas emissions, deforestation and actions related to climate change are part of good practices and projects in ESG.

Companies, whether large, medium or small, can invest in carbon reduction and offsetting, neutralizing their emissions and mitigating their impacts. It was this concern that led Jacquin to commit to decarbonizing all of his ventures.
